They are cut on the front and sides to maximize the visibility and detail of the design (which is a big deal!). Most other luminaries are cut on both sides and you can't see the design very well.

You can use small tea light candles inside, or battery operated tea light candles inside to illuminate them. They look even more amazing at sunset and in the evening.
